Light Christmas Cake

  1. Prepare 2 loaf pans by lining with foil.
  2. Cream the butter. Add sugar gradually; beat until creamy.
  3. Add almond flavor.
  4. Sift dry ingredients.
  5. Prepare fruit and nuts by cutting in small pieces and coating with flour.
  6. Now, beat eggs; add to first part. Add dry ingredients.
  7. Alternate with fruit and nuts and juices, beating after each addition.
  8. Pour into prepared pans.
  9. Bake for 2 1/2 to 3 hours in a 275u0b0 oven.
