Banana Split Cake
- 1 pt. vanilla ice cream
- 3/4 c. walnuts
- 1/2 c. graham cracker crumbs
- 7 Tbsp. butter or margarine
- 2 Tbsp. plus 3/4 c. sugar
- 1/2 c. cocoa
- 1 c. whipping cream
- 1 tsp. vanilla extract
- 4 ripe medium bananas
- 1 pt. chocolate ice cream
- 1 pt. strawberry ice cream
- 6 maraschino cherries (for garnish)
- Early in day or day ahead, soften vanilla ice cream in refrigerator, about 40 minutes.
- Finely chop 1/2 cup walnuts, reserving remaining 1/4 cup for garnish later.
- In 9-inch spring-form pan, combine chopped nuts, graham cracker crumbs, 3 tablespoons butter and 2 tablespoons sugar.
- With fingers, press mixture to bottom of pan.
- Evenly spread vanilla ice cream on top of crust; freeze until firm, about 45 minutes.
