Plum Tart
- 1 3/4 cups flour
- 8 tbsp (1 stick) cold butter, cut into cubes
- 1/2 cup sugar
- 1/4 cup ground almonds
- 1/2 cup sliced almonds
- 6 None plums, pitted and cut into wedges
- None None Plum or apricot jam, to glaze
- None None Whipped cream, to serve
- Pulse 1 1/2 cups of the flour and butter in a food processor until mixture resembles coarse breadcrumbs. With motor running, add 1/4 cup iced water. Process until dough comes together to form a ball. Place on a floured board and bring dough together using hands. Flatten to form a disc and wrap in plastic wrap. Refrigerate 50 mins.
- Preheat the oven to 400u0b0F. Line a baking pan with parchment paper.
- Roll pastry between 2 sheets of parchment paper to a 12-inch round. Place on prepared pan. Combine 1/3 cup of the sugar, ground almonds and remaining 1/4 cup flour and sprinkle on pastry, leaving a 2-inch border. Top with sliced almonds. Arrange plums over almonds. Sprinkle with remaining sugar, adding more if plums are tart. Fold pastry edges over plums.
- Bake 30 mins. Brush plums with a little warmed jam. Bake further 5 mins, until pastry is golden. Cool in pan on a wire rack. Serve with whipped cream.
