Mango Lassi Muffins
- 2 None limes, 1 thinly sliced, 1 zested and juiced
- 2/3 cup granulated sugar
- 7 tbsp butter, plus extra to grease
- 1 tsp vanilla extract
- 2 None eggs
- 1 cup all-purpose flour + 2 tbsp
- 2 tsp baking powder
- 1/3 cup mango lassi
- 3/4 cup powdered sugar, plus extra to dust
- Preheat the oven to 200u0b0F. Mix the sliced lime with 1/4 cup sugar. Arrange the limes on a baking sheet and dry in the oven for 2 hours. Turn the oven off and allow the limes to stand in the residual heat for an additional hour.
- Preheat the oven to 325u0b0F. Grease a 24 cup mini-muffin pan with butter then sprinkle with powdered sugar. Cream 7 tbsp butter, lime zest, the remaining sugar, a pinch of salt and vanilla extract together. Stir in the eggs, 1 at a time, followed by the flour and baking powder. Stir in the lassi and 1 tbsp lime juice then divide the mixture equally between the 24 muffin wells. Bake for 15-25 mins, until golden and springy. Remove the muffin pan from the oven and set aside for 10 mins. Remove the muffins and cool completely on a wire rack.
- Mix the powdered sugar with 1-2 tbsp lime juice until smooth. Spread the icing over the muffins and set aside for 1 hour to set up. Cut the dried lime slices in 1/2 and use to decorate the muffins then serve.
