Sloppy Joe With Potato Wedges

  1. Cook the potato wedges in a preheated oven according to package directions.
  2. Meanwhile, heat the oil in a large skillet on medium heat. Add the onion, pepper and celery and cook for 5 mins, stirring, until soft. Increase heat to high. Add the ground beef and cook for 10 mins, breaking up lumps with a spoon, until no longer pink.
  3. Stir in tomato sauce, mustard and vinegar and bring to a boil. Reduce heat to medium and cook, stirring occasionally, for another 5 mins, until slightly thickened.
  4. Top potato wedges with sloppy joe mixture. Sprinkle with cheese and green onions to serve.
