Spicy Rigatoni With Shrimp And Salmon

  1. Scald tomatoes with hot water, then plunge into cold water and remove skins. Dice tomatoes. Heat 1/2 tbsp oil in a pan and cook tomatoes, while stirring, for about 10 mins. Add goat cheese, stock and sambal oelek chili paste.
  2. Cook rigatoni in boiling salted water according to directions on the package.
  3. Heat butter in a pan and saute salmon for 4 mins. Season with sea salt and set aside. Add onions, leeks and carrots, and saute for 5 mins. Stir in tomato sauce. Return salmon to the pan, and season.
  4. Heat 1 tbsp oil in a pan and fry shrimp for 3-4 mins. Season with sea salt. Drain the rigatoni, and add to the salmon sauce. Serve with shrimp. Sprinkle with Parmesan shavings.
