Bacon-Wrapped Pork Tenderloin With Pepper Salsa
- 1 None red pepper, deseeded and finely diced
- 1 None yellow pepper, deseeded and finely diced
- 1 None green pepper, deseeded and finely diced
- 1 None shallot, finely chopped
- 1 clove garlic, finely chopped
- 1 None chilli pepper, deseeded and finely chopped
- 2 tbsp sherry vinegar
- 4 tbsp olive oil
- 2 sprigs rosemary, leaves picked plus extra to garnish
- 400 g pork fillet, in two pieces
- 16 rashers thin streaky bacon
- few sprigs None fresh oregano to garnish
- For the pepper salsa, mix peppers, shallot, garlic and chili. Add vinegar and oil. Season then set aside.
- Preheat the broiler. Season the pork loin and sprinkle with rosemary. Wrap with bacon and place, seam side down on a grill pan. Broil for 20-30 mins, turning frequently, until bacon is crisp and golden and pork is cooked through. Serve garnished with pepper salsa, oregano and reserved rosemary.
