Bacon And Cheese Rolls

  1. Preheat oven to 400u0b0F. Grease and line a baking tray with parchment paper.
  2. Heat a large frying pan over medium heat. Cook bacon, stirring, for 3-4 mins, or until crisp. Drain on paper towels.
  3. Place flour in a large bowl. Cut in butter until mixture resembles fine crumbs. Add milk and mix until it forms a soft dough, adding 1-2 tbsp more milk if needed. Turn dough out onto a lightly floured work surface. Knead briefly until smooth.
  4. Divide dough into 6 portions. Roll each portion into a 7x3 inch rectangle. Sprinkle with bacon and 3 oz Cheddar cheese. Starting from long edge, roll up dough into a log. Place logs, side by side, on prepared tray. Brush with extra milk to glaze. Sprinkle with remaining Cheddar cheese and Parmesan. Bake for 20 mins, or until golden.
  5. Serve immediately.
