Bacon And Cheese Rolls
- 4 slices bacon, finely chopped
- 1/2 cup self-rising flour, sifted
- 4 1/2 tbsp cold butter, chopped
- 3/4 cup cold milk, plus extra to glaze
- 4.5 oz Cheddar cheese, grated
- 2 tbsp Parmesan cheese, shredded
- Preheat oven to 400u0b0F. Grease and line a baking tray with parchment paper.
- Heat a large frying pan over medium heat. Cook bacon, stirring, for 3-4 mins, or until crisp. Drain on paper towels.
- Place flour in a large bowl. Cut in butter until mixture resembles fine crumbs. Add milk and mix until it forms a soft dough, adding 1-2 tbsp more milk if needed. Turn dough out onto a lightly floured work surface. Knead briefly until smooth.
- Divide dough into 6 portions. Roll each portion into a 7x3 inch rectangle. Sprinkle with bacon and 3 oz Cheddar cheese. Starting from long edge, roll up dough into a log. Place logs, side by side, on prepared tray. Brush with extra milk to glaze. Sprinkle with remaining Cheddar cheese and Parmesan. Bake for 20 mins, or until golden.
