Pepper Minute Steak With Mint And Bacon Peas
- 3 tbsp vegetable oil
- 1 slice bacon, chopped
- 1 None onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 3/4 cup chicken stock
- 2 cups frozen peas
- 2 tbsp chopped mint
- 8 None beef minute steaks (2-3 oz each), tenderized
- Heat 1 tbsp of the oil in a large skillet on medium heat. Add the bacon and saute for 2 mins. Add the onion and saute for 5 mins or until softened and golden. Add the garlic and saute for 1 min or until softened. Add the stock and bring to a simmer. Add the peas and cook for 2 mins or until bright green, stirring occasionally. Remove pan from heat. Add mint and season. Cover to keep warm.
- Heat 1 tbsp of oil in a large skillet on high heat. Sprinkle steaks with salt and cracked black pepper. Cook steaks in 2 batches for 30 seconds on each side or until browned. Add remaining 1 tbsp oil as needed.
- Spoon mint and bacon peas onto serving plates; top with steaks
