Steak With Mushrooms
- 2 tbsp canola oil
- 8.75 oz sirloin steak, cut into thin slices
- 2 1/2 tbsp butter
- 2 oz mushrooms, wiped clean and sliced
- 2 None onions, peeled and thinly sliced
- 1/4 cup beef stock
- 1/4 cup creme fraiche or sour cream
- 1-2 tsp Dijon mustard
- 1 None mild green chili pepper, thinly sliced
- 1 tbsp fresh parsley, roughly chopped
- Heat oil in a large cast iron pan, season steak then add to pan and sear over high heat for 1-2 mins per side. Work in batches if necessary. Remove and set aside. Melt butter then add mushrooms and onion and saute over medium-high heat for 3-4 mins until browned. Add stock, creme fraiche (or sour cream, if using) and mustard and bring to a boil. Return steaks to pan along with chili pepper. Season and simmer for 1-2 mins. Serve garnished with parsley.
