Steak With Mushrooms

  1. Heat oil in a large cast iron pan, season steak then add to pan and sear over high heat for 1-2 mins per side. Work in batches if necessary. Remove and set aside. Melt butter then add mushrooms and onion and saute over medium-high heat for 3-4 mins until browned. Add stock, creme fraiche (or sour cream, if using) and mustard and bring to a boil. Return steaks to pan along with chili pepper. Season and simmer for 1-2 mins. Serve garnished with parsley.
