Apple Dumplings In Honey Syrup With Caramelized Apples
- 2 1/4 cups self-rising flour
- 1 cup butter, softened + 2 1/2 tbsp
- 2 None apple, cored, peeled, finely chopped
- 1/2 cup milk
- 1 None egg, lightly beaten
- 2 tsp vanilla extract
- 1/2 cup brown sugar + 1 tbsp
- 1/4 cup honey
- 1 tsp ground cinnamon
- None None half-and-half, to serve
- Sift flour into a large bowl. Cut in 1/2 cup butter until mixture resembles breadcrumbs. Add 1 apple. Whisk together milk, egg and vanilla then add to flour. Mix until soft and sticky then shape into 16 balls. Set aside.
- To make the honey syrup, combine 1/2 cup water, 1/2 cup butter, 1/2 cup sugar and honey. Stir over low heat until sugar dissolves. Bring to a boil then reduce heat and simmer for 5 mins. Working in batches, add dumplings and cook, covered, for 10-12 mins, or until cooked through.
- To make caramelised apple, melt remaining butter over high heat. Add sugar and cinnamon. Add remaining apple and saute for 3-4 mins, until caramelised. Serve with dumplings and syrup, topped with half-and-half.
