Broccoli Quiche
- 1 lb. broccoli, coarsely chopped
- 3 Tbsp. butter
- 2 Tbsp. flour
- 3 Tbsp. onion, chopped
- 1 1/2 c. milk
- 2 c. shredded cheese (Swiss, etc.)
- 2 eggs, beaten
- 1 prebaked pie or quiche shell
- meat of choice (bacon, ham, sausage, pork or tuna, etc.)
- 1 1/2 tsp. salt
- Preheat oven to 325u0b0.
- Bake frozen pie shell.
- In medium saucepan over high heat steam broccoli.
- In another pan over medium heat melt butter.
- Stir in flour and salt until smooth.
- Add onion and cook 1 minute.
- Slowly stir in milk, stirring constantly, until mixture thickens and begins to boil.
- Remove from heat.
- Stir in broccoli and cheese.
- When cheese has slightly melted, stir in eggs.
- Add cooked meat.
- Bake 30 minutes or center is firm to touch.
