Mini Hot Dog Muffins
- 1 3/4 cups self-rising flour
- 1 tsp baking powder
- 5.5 oz Cheddar cheese, grated
- 3 tbsp fresh flat-leaf parsley leaves, coarsely chopped
- 2 None eggs, at room temperature
- 3/4 cup milk
- 1/2 cup butter, melted
- 8 None cocktail wieners
- None None tomato sauce, to serve
- Preheat oven to 400u0b0F. Grease and line 8 mini loaf pans with parchment paper.
- Sift together flour, baking powder and a pinch of salt. Add 4.5 oz cheese and parsley. Whisk together eggs, milk and butter then mix into dry ingredients until just combined. Distribute 1/2 of batter between prepared pans. Add a cocktail wiener to each pan then top with remaining batter. Sprinkle with remaining Parmesan and bake for 20 mins, or until golden brown. Let cool in pans for 5 mins then transfer to a wire rack to cool slightly.
- Serve with tomato sauce.
