Mini Hot Dog Muffins

  1. Preheat oven to 400u0b0F. Grease and line 8 mini loaf pans with parchment paper.
  2. Sift together flour, baking powder and a pinch of salt. Add 4.5 oz cheese and parsley. Whisk together eggs, milk and butter then mix into dry ingredients until just combined. Distribute 1/2 of batter between prepared pans. Add a cocktail wiener to each pan then top with remaining batter. Sprinkle with remaining Parmesan and bake for 20 mins, or until golden brown. Let cool in pans for 5 mins then transfer to a wire rack to cool slightly.
  3. Serve with tomato sauce.
