Blueberry Pancakes

  1. Sift the flour, sugar and baking soda into a large bowl. Whisk the egg, buttermilk and butter in a medium bowl. Gradually stir into the flour mixture until smooth.
  2. Spray a large skillet with no stick cooking spray and heat to medium. Place 4 heaping tablespoons of batter into the pan to make 4 pancakes. Sprinkle each one with a few blueberries. Cook for 2 mins, until bubbles appear on the surface. Turn and cook for 30 seconds, until lightly browned. Remove to a plate and cover to keep warm. Cook the remaining batter to make 24 pancakes.
  3. Serve the pancakes with a dollop of yogurt and additional blueberries on top.
