Beef In Asian Broth
- 1 3/4 cups beef stock
- 2 tsp grated fresh ginger
- 2 tbsp reduced sodium soy sauce
- 1 tsp sesame oil
- 4 oz bean thread noodles
- 1 lb beef sirloin steak, trimmed and thinly sliced
- 1 None red pepper, seeded and thinly sliced
- 1/2 cup canned baby corn
- 1 None green onion, thinly sliced
- 1 lb baby bok choy, coarsely chopped
- 2 cups bean sprouts
- 1 None red Thai chili pepper, thinly sliced
- Combine 6 cups water, stock, ginger, soy sauce and sesame oil in a large saucepan; bring to a boil. Add the noodles; using a fork, separate the noodles. Reduce the heat to low; simmer, uncovered, until the noodles are just tender.
- Add the remaining ingredients; stir until heated through and the beef is cooked to desired doneness.
