Grilled Scallops And Chanterelle Mushrooms
- 8 None small scallops, shelled
- 1 tbsp flour
- 3 tbsp oil
- 1 1/2 lbs chanterelle mushrooms or white mushrooms
- 3 sprigs fresh flat-leaf parsley, leaves roughly chopped
- 1 1/4 cups whipping cream
- Preheat your oven's broiler. Season the scallops with salt and black pepper and roll in the flour, tapping off any excess. Heat 2 tbsp oil in a frying pan and saute the scallops, turning, for 2-3 mins. Remove and drain on paper towels.
- Add 1 tbsp oil to the pan and saute the mushrooms for 3-4 mins. Add 3/4 of the parsley and season with salt and black pepper. Spoon into 4 ovenproof ramekins and add 2 scallops to each.
- Add the cream to the pan and simmer for 1-2 mins. Pour into the ramekins and broil for 5 mins, until golden brown. Sprinkle with the remaining parsley to serve.
