Lamb And Couscous Stir-Fry

  1. Place couscous in a small bowl; stir in 3/4 cup boiling water. Cover and let stand for 5 minutes or until liquid is absorbed. Add cilantro; fluff with a fork to separate grains.
  2. Heat a wok or large skillet on high heat. Add oil; swirl to coat bottom and sides. Stir-fry lamb for 1-2 mins or until browned. Add onion and zucchini; stir-fry for 1-2 mins or until just tender.
  3. Add spices, couscous and salt; stir-fry for 1 min or until heated through.
  4. Mix yogurt and garlic in a bowl. Spoon lamb mixture into serving bowls. Serve topped with yogurt.
