Lemongrass Pork And Prawn Skewers
- 8.75 oz raw king prawns, peeled, deveined
- 12 oz ground pork
- 2 tsp fresh ginger, finely grated
- 2 cloves garlic, crushed
- 3 tbsp fresh cilantro, chopped + extra leaves, to serve
- 1 tbsp palm sugar, grated
- 8 stalks lemongrass, tops and pale ends trimmed until 6 inches long, pale ends finely chopped
- 2 tbsp fish sauce
- 2 tbsp lime juice + lime wedges, to serve
- 1 tbsp honey
- In a food processor, process prawns until finely chopped. Add pork, ginger, garlic, 2 tbsp cilantro, palm sugar and 1/4 tsp salt. Process until combined. Lightly bruise lemongrass stalks to release flavor. Divide pork mixture into 8 portions and shape around lemongrass stalks. Place on a baking tray lined with plastic wrap, cover and chill for 30 mins.
- Meanwhile, to make the dipping sauce, combine fish sauce, lime juice, honey, remaining cilantro and finely chopped lemongrass. Transfer to a serving bowl and set aside.
- Preheat broiler. Lightly coat lemongrass skewers with oil and broil for 8-10 mins, turning occasionally, until cooked through. Serve with dipping sauce, lime wedges and cilantro.
