Breakfast Beans With Bacon, Sausages And Eggs
- 1 tbsp olive oil
- 4 slices bacon, coarsely chopped
- 1 None medium Spanish onion, coarsely chopped
- 1 clove garlic, coarsely chopped
- 2 (13.5 oz) cans diced tomatoes
- 1/4 cup brown sugar
- 1 tbsp Worcestershire sauce
- 2 tsp mustard powder
- 2 (13.5 oz) cans butter beans, rinsed, drained
- 12 None chipolata sausages
- 6 None large eggs
- Heat oil in a frying pan. Cook bacon, onion and garlic, stirring, until onion softens. Add tomatoes, 1 cup water, sugar, Worcestershire sauce, mustard powder and beans. Cook, covered, for 20 mins.
- Meanwhile, cook sausages and eggs in an oiled frying pan until sausages are cooked through and egg white has set.
- Serve beans with sausages and eggs.
