Curry And Lime Lentil Soup

  1. Heat oil in large saucepan. Cook curry paste, stirring, until fragrant. Add onion, garlic, ginger and cumin. Cook, stirring, until onion has softened. Add lentils, stock, tomatoes and 2 1/2 cups water. Bring to a boil then reduce heat and simmer for 20 mins, or until lentils are softened.
  2. Stir in lime zest and juice. Return to a boil then remove from heat and stir in parsley.
