Curry And Lime Lentil Soup
- 2 tsp vegetable oil
- 1 tbsp hot curry paste
- 1 None medium onion, finely chopped
- 2 cloves garlic, minced
- 3/4 inch fresh ginger, grated
- 1 tsp cumin seeds
- 7 oz red lentils
- 2 cups vegetable stock
- 1 (13.5 oz) can chopped tomatoes
- 1 tsp lime zest
- 1/4 cup lime juice
- 3 tbsp fresh flat-leaf parsley leaves, chopped
- Heat oil in large saucepan. Cook curry paste, stirring, until fragrant. Add onion, garlic, ginger and cumin. Cook, stirring, until onion has softened. Add lentils, stock, tomatoes and 2 1/2 cups water. Bring to a boil then reduce heat and simmer for 20 mins, or until lentils are softened.
- Stir in lime zest and juice. Return to a boil then remove from heat and stir in parsley.
