No-Bake Granola Bars
- 3/4 cup rolled oats
- 1 cup shredded coconut
- 1/4 cup sesame seeds
- 1/2 cup pumpkin seeds
- 1 cup dried apricots, chopped
- 1/2 cup dried cranberries
- 1/2 cup butter
- 1/2 cup honey
- 1/4 cup brown sugar
- Lightly grease and line a 7 x 10 inch baking pan with parchment paper, extending 2 inch over the long sides. In a large bowl, combine oats, coconut, sesame seeds, pumpkin seeds, apricots and cranberries. Mix well.
- Heat butter, sugar and honey in a small saucepan. Stir for 2-3 mins, until sugar dissolves. Bring to a boil, then reduce heat to low and simmer, without stirring, for 8-10 mins until caramelized. Pour over dry ingredients and stir until combined.
- Spoon mixture into pan, pressing firmly with a metal spatula. Chill until firm. Cut into bars.
