Crispy Milk And Date Pies
- None None Date Jam
- 1 cup pitted dates, chopped
- 2 tbsp granulated sugar
- None None Milk Pie
- 8 sheets filo dough
- 4 tbsp butter, melted
- 1/2 cup heavy cream
- 1/3 cup 2% milk
- 2 None egg yolks
- 1/4 cup granulated sugar
- 1/4 tsp vanilla extract
- None None cinnamon sugar, to dust
- None None powdered sugar, to dust
- Preheat oven to 350u0b0F. Lightly grease 4 - 5 inch pie dishes. Place on a baking tray.
- To make the date jam, bring dates, sugar and 1/2 cup water to a boil. Reduce heat to low and simmer for 5-6 mins, until thick. Let cool.
- Brush 2 sheets of filo dough with butter and layer together. Spread 1/4 of the date jam along center then scrunch short ends towards each other in even folds (like a fan without pleats). Roll up into a loose spiral and fit inside of a prepared dish. Repeat with remaining filo dough, butter and jam. Bake for 8-10 mins, until pastry is crisp and slightly golden.
- Meanwhile, combine cream and milk in a small saucepan. Stir over medium heat until almost boiling. Remove from heat. Whisk together egg yolks, sugar and vanilla. Gradually whisk in milk until combined. Pour over filo dough. Sprinkle with cinnamon sugar. Bake for another 10-15 mins, until firm.
- Serve dusted with powdered sugar.
