Sausage And Cheddar Frittata
- 2 None eggs
- 1 tbsp 2% milk
- 2 tbsp fresh flat-leaf parsley, chopped, plus extra, to serve
- 1 tbsp vegetable oil
- 2 None breakfast sausages
- 4 None button mushrooms, halved
- 4 None cherry tomatoes, halved
- 1 oz Cheddar cheese, grated
- Preheat broiler. Whisk together eggs, milk and parsley. Heat oil in an 8 inch nonstick frying pan. Cook sausages and mushrooms for 6-8 mins, or until sausages are cooked through. Let cool slightly then cut sausages in half lengthwise.
- Arrange tomatoes, sausages and mushrooms in frying pan. Place over low heat. Pour egg mixture over meat and vegetables and stir briefly to distribute mixture. Cook, without stirring, for 3 mins, or until slightly firm around the edges. Sprinkle with cheese.
- Transfer to oven and broil for 3 mins, or until top is golden and set. Serve sprinkled with extra parsley.
