Caraway Lamb Triangles

  1. Preheat the oven to 350u0b0F. Line 2 baking pans with parchment paper.
  2. Spray the onion with no stick cooking spray. Heat a large skillet on medium heat. Cook and stir the onion for 2 mins. Add the ground lamb and cook, stirring with a wooden spoon to break up the lumps, for 3-4 mins or until browned. Stir in the garlic and spice and cook for 30 seconds or until fragrant. Remove from the heat. Stir in the carrot, almonds and cilantro and mix well.
  3. For each triangle, place 1 sheet of phyllo on work surface. Spray with cooking spray. Fold in half lengthwise, twice, to make a long, thin strip. Spoon 1 heaping tablespoon of filling onto one end of the strip. Fold phyllo over to cover filling, forming a triangle. Continue folding, keeping triangle shape, until the end of the phyllo strip. Place on the prepared pans. Spray the triangles with cooking spray and sprinkle with caraway seeds.
  4. Bake for 12-15 mins or until golden. Serve with pesto for dipping.
