Pork Roll With Cranberry Chestnut Stuffing
- 2 tbsp oil
- 3 cloves garlic, peeled and chopped
- 8 oz baby spinach
- 1 1/2 lbs pork chops
- 9 oz bacon
- 5 oz canned or vacuum-packed chestnuts, chopped
- 3.5 oz cranberry jelly
- 2 tbsp honey
- Preheat oven to 375u0b0F. Heat oil in a frying pan and cook garlic and spinach for 2-3 mins. Set aside to cool. Flatten pork steaks with a rolling pin until 1/2 inch thick.
- Place an 18 x 20 inch piece of foil on the work surface. Arrange bacon on foil, leaving a 4 inch border. Arrange pork on top, then cover with spinach, chestnuts and cranberry jelly. Season to taste. Roll up, wrapping in foil and twisting foil ends to seal. Place on a baking sheet.
- Bake for 1 hr. Remove foil; drain off juices. Drizzle with honey and return to oven for 10 mins. Let rest for 10 minutes, then slice and serve.
