Steak Pizzaiola
- 2 tbsp olive oil
- 8 None thin-cut beef steaks (minute steaks)
- 1 clove garlic, crushed
- 1 can (14 oz) diced tomatoes
- 1/4 cup pitted Kalamata olives
- 1/4 cup chopped basil, plus additional leaves to serve
- 1 tsp sugar
- 1 cup crumbled feta cheese
- None None crusty bread, green salad, to serve
- Heat 2 tbsp of the oil in a large skillet on high heat. Season steaks. Cook for 1 min each side or until well seared. Transfer to a plate and cover with foil to keep warm.
- Heat remaining 2 tbsp oil in same pan on medium heat. Saute garlic for 30 seconds. Add tomatoes and bring to a simmer. Cook, stirring occasionally, for 8-10 mins, or until sauce thickens. Stir in olives, basil and sugar. Season to taste.
- Return steaks to pan with sauce and simmer, covered, for 1-2 mins or until heated through.
- Serve steaks topped with sauce and sprinkled with feta and additional basil leaves. Accompany with crusty bread and green salad.
