Hungarian Goulash
- 1/4 cup flour
- 1 1/3 lbs cubed beef stew meat
- None None No stick cooking spray
- 1 None large onion, finely chopped
- 2 cloves garlic, crushed
- 1 tbsp sweet paprika
- 2 None large ripe tomatoes, chopped
- 1 can (14 oz) diced tomatoes
- 1/2 cup beef stock
- 11 oz portobello mushrooms, sliced
- 1 cup frozen peas
- None None Mashed potato, to serve
- None None Sour cream, to serve
- Preheat the oven to 325u0b0F. Place flour and a pinch of salt in a shallow dish. Coat beef in the seasoned flour. Spray with the cooking spray.
- Spray a Dutch oven with the cooking spray. Heat on medium heat. Cook the beef batches until browned on all sides. Remove from the skillet.
- Spray onion with the cooking spray then add to the Dutch oven. Cook and stir for 2 mins. Add the garlic; cook for 30 seconds. Stir in the paprika, tomatoes, beef and stock. Bring to a boil.
- Bake, covered, for 1 hour. Stir in the mushrooms. Bake, covered, for 15 mins. Stir in the peas. Bake, covered, for 10 mins.
- Spoon mashed potato into shallow bowls. Top with goulash and sour cream. Serve sprinkled with additional paprika.
