Hearty Goulash Pasta Soup

  1. Toss steak in seasoned flour, shaking off excess.
  2. Heat 1 tbsp of the oil in a large saucepan on high heat. Cook steak for 3-4 mins, until browned. Remove from pan.
  3. Heat remaining 1 tbsp oil in same pan on medium-high heat. Add onion, pepper and garlic. Saute for 4-5 mins, until tender. Add paprika, stirring for 1 min until fragrant. Mix in tomato paste.
  4. Return steak to pan. Stir in stock, 2 cups water, wine and bay leaf. Bring to a boil. Add pasta and reduce heat to medium. Cook for a further 10-15 mins, until pasta is tender.
  5. Serve soup with a dollop of sour cream and a sprinkling of parsley. Accompany with crusty bread.
