Chicken With Pepper And Cheese Sauce
- 2 whole chicken breasts, cut into 1-inch pieces
- 2 Tbsp. oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 1/2 Tbsp. flour
- 1 Tbsp. jalapeno pepper, chopped
- 1/4 c. sour cream
- 1 c. shredded Monterey Jack or Cheddar cheese
- linguini or spinach fettucini
- 1 red or green pepper, chopped
- 1 c. chicken broth
- 1/2 c. milk
- 1 tsp. Worcestershire sauce
- Combine 2 tablespoons flour, salt and pepper; toss to coat chicken.
- In a skillet cook chicken in oil until tender.
- Remove chicken, add onion, peppers, jalapeno, garlic, flour and chicken broth to make a thick paste.
- Stir well.
- Add milk, sour cream and Worcestershire sauce.
- Add chicken and cook until well blended. Stir in cheese and cook until melted.
- Serve over hot pasta.
