Sweet Chili Beef With Noodles
- 7 oz wide rice noodles
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 2 tsp grated fresh ginger
- 1 lb beef stir-fry strips
- 14 oz frozen stir-fry vegetables, thawed
- 2 tbsp chicken stock
- 1 tbsp lemon or lime juice
- 2 tbsp sweet chile sauce
- 2 None spring onions, thinly sliced diagonally
- Soak noodles in boiling water in a large heatproof bowl for 5 mins; stir to separate strands, then drain.
- Heat a wok or large skillet over moderately high heat. Add oil; swirl to coat surface. Add garlic and ginger; stir-fry for 30 seconds or until fragrant. Add beef, in two batches; stir-fry for 2-3 mins or until seared. Remove from wok.
- Add vegetables and stock to wok; cook, covered, for 1-2 mins or until vegetables are tender. Uncover. Return beef to wok; stir-fry to combine. Add juice and chile sauce; toss until heated. Place noodles in serving bowls. Top with beef mixture. Serve sprinkled with onion.
