Turkish Chicken And Couscous
- 1 cup couscous
- 2 tbsp cilantro leaves + extra to serve, chopped
- 2 tbsp olive oil
- 1 tbsp preserved lemon, chopped
- 1/2 None cooked grilled chicken, meat shredded
- 1 None small red onion, peeled and sliced
- 4 oz dried apricots, chopped
- 2 tbsp toasted flaked almonds
- 1/2 None pomegranate, seeds removed
- 2 tsp harissa
- 3/4 cup Greek yogurt
- Prepare the couscous following packet instructions. Fluff with a fork and leave to cool.
- In a large bowl, combine the couscous, cilantro, oil and lemon. Mix well and season to taste.
- Add the shredded chicken, onion, apricot, almonds and pomegranate seeds. Toss well.
- In a small serving bowl, swirl the harissa through the yogurt. Serve the couscous topped with extra cilantro. Accompany with the spiced yogurt.
