Chocolate Marsala Cake With Strawberries And Mascarpone
- 1 tbsp instant coffee
- 1/2 cup marsala
- 2 oz milk chocolate, melted, plus more, shaved, to serve
- 10 oz mascarpone cheese, at room temperature
- 1 1/2 cups heavy cream
- 18 None lady's finger cookies
- 10 oz strawberries, hulled, sliced, plus more whole strawberries, to serve
- Lightly spray a deep 8 inch springform cake pan with oil and line with plastic wrap. In a large bowl, dissolve coffee in 2 tbsp boiling water. Mix in 1 cup water and marsala. Transfer to a shallow dish and cool.
- For the mascarpone filling, whisk melted chocolate and 1/4 cup of mascarpone together until smooth. Gradually mix in remaining mascarpone. In a bowl, beat cream until soft peaks form. Gently fold in mascarpone mixture.
- To assemble, dip lady's fingers in coffee mixture to coat. Arrange half in base of pan, cutting to fit. Spread with half the mascarpone mixture, smoothing top. Cover with a single layer of sliced strawberries. Repeat layers and chill 2 hours until firm.
- Release cake from pan and carefully remove plastic wrap. Top with extra strawberries and shaved chocolate.
