Magic Fruit Cake
- 1 pkg. None Such mincemeat
- 1 1/2 c. water
- 2 1/2 c. sifted flour
- 1 tsp. baking soda
- 2 eggs, lightly beaten
- 1 1/2 c. (13 oz.) Eagle Brand milk
- 2 c. (1 lb. jar) candied fruit and peels
- 1 c. walnuts, coarsely chopped
- Break mincemeat into chunks in a medium size saucepan; add water.
- Stir over medium heat until lumps are broken up.
- Boil 1 minute; stir occasionally.
- Cool.
- Butter a 9-inch tube pan or spring pan.
- Line with wax paper and butter again.
- Sift flour and baking soda.
- Combine eggs, mincemeat, condensed milk, fruit and nuts.
- Fold in dry ingredients.
- Pour in pan; bake slow at 300u0b0 for 2 hours plus, until center springs back when lightly touched with finger and top is golden brown.
- Turn out of pan.
- Remove paper. For a richer cake, use two packages of mincemeat quantities of water and other ingredients stay the same.
- It makes a big cake and so-so-so good.
- Serves 12.
