Pork With Fried Rice
- 6 tbsp soy sauce
- 2 tbsp sesame oil
- 1 lb pork tenderloin, sliced into 1 inch wide strips
- 7 oz basmati rice
- 4 tbsp sunflower oil
- 2/3 lb carrots, halved lengthwise and sliced
- 1/2 lb scallions, halved lengthwise and cut into 8cm long slices
- 3 tbsp fresh ginger, peeled and diced
- 2 cloves garlic, peeled and diced
- 1/2 cup vegetable stock
- Mix the soy sauce and sesame oil together and marinate the pork strips in it. Cook the rice in boiling salted water according to package instructions.
- Heat 2 tbsp of sunflower oil in a wok or frying pan. Fry the marinaded pork (keep the marinade) for about 3 mins, turning until golden on all sides. Remove the meat and fry the carrots in the hot oil for about 5 mins. After 3 mins, add the scallions, ginger, garlic and remaining marinade, then add the pork and fry. Pour in the stock and bring to a boil. Remove the vegetables and stock, then add the rest of the oil to the wok. Fry the rice, while stirring, for about 4 mins then add the pork and vegetables. Stir and serve.
