Pork With Fried Rice

  1. Mix the soy sauce and sesame oil together and marinate the pork strips in it. Cook the rice in boiling salted water according to package instructions.
  2. Heat 2 tbsp of sunflower oil in a wok or frying pan. Fry the marinaded pork (keep the marinade) for about 3 mins, turning until golden on all sides. Remove the meat and fry the carrots in the hot oil for about 5 mins. After 3 mins, add the scallions, ginger, garlic and remaining marinade, then add the pork and fry. Pour in the stock and bring to a boil. Remove the vegetables and stock, then add the rest of the oil to the wok. Fry the rice, while stirring, for about 4 mins then add the pork and vegetables. Stir and serve.
