Chocolate Malt Meringues
- 3 None egg whites
- 1/2 cup firmly packed light brown sugar
- 2/3 cup powdered sugar, plus additional, for dusting
- 1/4 cup unsweetened cocoa powder
- 2 tbsp malted milk powder
- 5 oz milk chocolate, melted
- Preheat the oven to 250u0b0F. Grease 2 baking pans. Trace twenty four 2-inch rounds, about 1 inch apart, onto 2 sheets parchment paper to use as a guide. Line pans with paper, marked-side down.
- Beat egg whites in medium bowl with electric mixer until soft peaks form. Gradually add brown sugar, beating until sugar dissolves. Fold in sifted combined powdered sugar, cocoa and malt powder.
- Spoon mixture into piping bag fitted with 1/2-inch plain tip. Pipe mixture into rounds on pans using paper as a guide.
- Bake meringues about 2 hours. Cool in oven with door ajar.
- Dip tops of meringues in melted chocolate. Let stand at room temperature until set. Dust with additional sifted powdered sugar.
