Chilli Shrimp With Salsa Fresca

  1. Thread each shrimp onto a skewer, pushing tip up through center of tail.
  2. In a small bowl, combine oil, chili and garlic; brush over prawns to coat.
  3. Heat a grill or grill pan over medium heat. Grill shrimp 1-2 minutes each side, until cooked through and lightly charred.
  4. To make salsa fresca, combine all ingredients in a large bowl, toss and season to taste. Serve with shrimp.
