Spaghetti With Peanut And Sesame Dressing
- 18 oz spaghetti
- 1/4 cup fresh ginger, finely chopped
- 1 clove garlic, finely chopped
- 1 None mild red chili, deseeded and chopped
- 2/3 cup tahini paste
- 1/2 cup smooth peanut butter
- 1/4 cup soy sauce
- 2 tbsp rice wine vinegar
- 2 tsp honey
- 1 tbsp sesame oil
- 4 None spring onions, chopped
- 1/2 None cucumber, chopped
- 1 handful peanuts, chopped
- None None crushed red pepper flakes, to garnish
- Cook spaghetti in boiling salted water until al dente. Drain then rinse under cold water and transfer to a serving bowl.
- Meanwhile, combine ginger, garlic, chili, tahini, peanut butter, soy sauce, red wine vinegar and honey in a blender with 1/2 cup water and puree. Toss with pasta, sesame oil, spring onions, cucumber and nuts. Serve sprinkled with red pepper flakes.
