Baked Apples With Berries
- 2 cups frozen mixed berries
- 4 large Granny Smith apples
- 4 None cardamom pods
- 1/2 cup yogurt
- 2 tsp honey
- Place the berries in a fine sieve set over a small bowl, and cover. Thaw in the refrigerator overnight.
- Preheat the oven to 325u0b0F.
- Core the unpeeled apples about three-quarters of the way down from the stem end, making a hole 1 1/2 inches in diameter. Use a small sharp knife to score around the center of each apple. Make a small deep cut in the bottom of each apple and insert one cardamom pod into each cut.
- Pack three-quarters of the berries firmly into the apples and place the apples in a small baking dish. Bake, uncovered, for 45 mins or until the apples are just tender.
- Meanwhile, mash the remaining berries with a fork in a small bowl. Stir in the yogurt and honey.
- Serve the apples with the yogurt mixture.
