Baked Apples With Berries

  1. Place the berries in a fine sieve set over a small bowl, and cover. Thaw in the refrigerator overnight.
  2. Preheat the oven to 325u0b0F.
  3. Core the unpeeled apples about three-quarters of the way down from the stem end, making a hole 1 1/2 inches in diameter. Use a small sharp knife to score around the center of each apple. Make a small deep cut in the bottom of each apple and insert one cardamom pod into each cut.
  4. Pack three-quarters of the berries firmly into the apples and place the apples in a small baking dish. Bake, uncovered, for 45 mins or until the apples are just tender.
  5. Meanwhile, mash the remaining berries with a fork in a small bowl. Stir in the yogurt and honey.
  6. Serve the apples with the yogurt mixture.
