Pork Chops With Bacon, Brussels Sprouts And Peas
- 1 tsp fennel seeds, crushed
- 1 tbsp fresh dill, chopped
- 2 tsp extra virgin olive oil
- 4 None pork chops
- 4 slices bacon, chopped
- 4.5 oz frozen peas
- 1 lb Brussels sprouts, halved lengthwise
- Preheat oven to 400u0b0F. In a small bowl, combine fennel seeds, dill and oil. Rub over pork to coat. Season.
- Heat a large nonstick frying pan over high heat. Sear pork until browned on both sides. Transfer to a roasting pan and bake for 5 mins, or until just cooked through. Remove from oven, cover with foil and let rest for 10 mins.
- Meanwhile, add bacon to frying pan and cook, stirring, until browned. Add peas and cook for 1 min. Add Brussels sprouts and cook, stirring, over high heat until softened slightly. Season. Serve with pork chops.
