Stir-Fried Beef With Pepper And Black Bean Sauce
- 14 oz beef sirloin steak, thinly sliced
- 2 tsp rice wine or dry sherry
- 1 tbsp light soy sauce
- 1/3 tsp cornstarch
- 1 tbsp fermented black beans, finely chopped
- 2 cloves garlic, finely chopped
- 2 tsp grated fresh ginger
- 1/4 cup vegetable oil
- 1 None onion, thinly sliced
- 2 None green peppers, cut into strips
- None None Steamed rice, to serve
- Combine rice wine, soy sauce and cornstarch in a medium bowl. Add beef; turn to coat. Season with pepper and set aside for 10 mins. In a separate bowl, combine black beans, garlic and ginger.
- Heat 1 tbsp of the oil in a wok on high heat. Stir-fry half the beef for 3 mins, or until browned. Remove from wok. Repeat with remaining beef.
- Heat remaining 2 tbsp oil in wok on high heat. Stir-fry onion for 2 mins. Add black bean mixture and cook for 1 min. Add peppers and stir-fry for 1 min. Return beef to wok with 2 tbsp water and stir-fry for 2 mins, or until heated through. Serve with steamed rice.
