Hungarian Cabbage Casserole
- 1 1/4 lb waxy potatoes, peeled and cut into pieces
- 1 tbsp oil
- 5.25 oz salami, skin removed and diced
- 1 bunch spring onions, sliced
- 1 None red bell pepper, diced
- 2 - 15 oz jars sauerkraut
- 1 cup sour cream
- 4 None eggs
- 1/3 lb feta cheese, crumbled
- Preheat oven to 350u0b0F. Grease a baking dish. Cook the potatoes in boiling salted water for 5-10 mins then drain and set aside.
- Heat 1 tbsp oil in a large saucepan and saute the salami. Add the onions and peppers, briefly saute then add the sauerkraut and cook for about 10 mins.
- Meanwhile, mix together the sour cream and eggs and season. Mix the potatoes with the sauerkraut mixture, transfer 1/2 to the prepared dish and top with 1/2 the cream mixture. Repeat then top with feta. Bake for 40-45 mins.
