Potato And Fish Stew

  1. Heat the oil in a frying pan, add the onion and saute for 3-4 mins, stirring. Add the potatoes and carrots and saute for 1-2 mins. Sprinkle the flour over the vegetables and saute for another 1-2 mins then mix in the stock. Cover and simmer for 12-15 mins, stirring occasionally.
  2. Mix the fish and lemon juice together and season. Stir the cream and horseradish into the vegetables and bring to a boil. Lower the fish into the sauce and gently simmer for 4-5 mins until cooked through. Serve.
