Spicy Green Tomato Relish
- 2 1/4 lbs green tomatoes, sliced
- 2 1/4 lbs pickling cucumbers, chopped
- 1 None onion, sliced
- 1 None green pepper, chopped
- 1/2 cup kosher salt
- 2 cups cider vinegar
- 1 cup white vinegar
- 1 tsp ground mustard
- 1/2 tsp ground allspice
- 1/4 tsp mixed spice, such as pumpkin pie spice
- 1/2 tsp ground cinnamon
- 1/4 tsp ground black pepper
- 1 cup firmly packed brown sugar
- Combine the vegetables in a large bowl. Sprinkle with the salt; cover. Let stand for several hours. Rinse under cold water; drain well.
- Combine the vegetables, vinegars and spices in a large saucepan. Bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, for about 45 mins. Add the sugar and stir, without boiling, until the sugar is dissolved. Bring to a boil and boil, uncovered, for 15 mins.
- Pour into hot sterilized jars; seal immediately. Label and date jars when cold. Store in a cool dry place. Once opened, store in the refrigerator.
