Peach Yogurt Cake
- 2/3 cup margarine, 1 tbsp melted
- 1 (13.5 oz) can peach slices in juice, drained, juice reserved
- 1 cup granulated sugar
- 1 tsp orange zest
- 2 None eggs
- 1/2 cup vanilla soy yogurt
- 1/4 cup semolina
- 1/4 cup ground almonds
- 1/2 tsp baking powder
- Preheat oven to 350u0b0F. Grease and line an 8x4 inch loaf pan with parchment paper. Pour melted margarine into pan. Arrange peaches over top.
- Cream remaining spread, sugar and orange zest until light and fluffy. Add eggs, 1 at a time, beating well between additions. Add yogurt. Fold in semolina, ground almonds and baking powder. Transfer to prepared pan, smooth surface and bake for 50-55 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool.
- Serve in slices.
