Nut And Seed Bread
- 2 1/4 cups self-rising flour
- 1/2 cup butter, chilled, chopped
- 1/4 cup sunflower seeds
- 2 1/2 tbsp pepitas
- 2 tbsp flax seeds
- 3/4 cup dried figs, finely chopped
- 2/3 cup pecans, coarsely chopped
- 1/2 cup Greek yogurt
- 1 None egg, at room temperature, lightly whisked
- None None butter, to serve
- None None honey, to serve
- Preheat oven to 400u0b0F. Grease and line 2 - 7x3 inch loaf pans with parchment paper.
- Place flour in a bowl. Cut in butter until mixture resembles breadcrumbs. Add seeds, figs and 1/2 cup pecans. Add yogurt and egg. Mix until just combine. Divide between prepared pans, smooth surface and sprinkle with remaining pecans. Bake for 35 mins, or until loaves are golden. Let cool in pan for 2 mins then transfer to a wire rack to cool completely.
- Serve sliced, with butter and honey.
