Briwat (Lamb Filo Cigars)
- 1 tbsp olive oil
- 1 None medium Spanish onion, chopped finely
- 2 cloves garlic, minced
- 18 oz ground lamb
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp ground coriander
- 2 tbsp toasted slivered almonds
- 1 tsp finely grated lemon zest
- 1 tbsp lemon juice
- 1 tbsp finely chopped fresh cilantro
- 18 sheets filo dough
- 12 tbsp butter, melted
- 2/3 cup plain yogurt
- None None lemon wedges, to serve
- Heat oil in a large frying pan over medium heat. Cook onion and garlic until onion softens. Add ground lamb and spices. Cook, stirring, until lamb is browned. Stir in nuts, lemon zest, lemon juice and 1/2 the cilantro. Let cool. Season to taste.
- Preheat oven to 400u0b0F. Grease and line 2-3 baking trays.
- Layer 3 sheets of filo dough together, brushing each layer with butter. Cut into 3 rectangles lengthwise. Press a rounded tablespoon of lamb mixture into a log shape along 1 short end of each rectangle. Roll pastry over filling then fold in sides then roll up to make a cigar shape. Repeat to make a total of 18 cigars.
- Arrange cigars, seam-side down, on baking trays. Brush with remaining butter then bake for 15 mins, or until golden brown.
- Meanwhile, combine yogurt and remaining cilantro. Serve cigars with yogurt and lemon wedges.
