Passion Fruit And Meringue Pudding
- 1 2/3 cups passion fruit juice
- 1/2 cup sugar
- 2 None eggs plus 3 egg yolks
- 1 tsp cornstarch
- 1 None egg white
- 1 tsp lemon juice
- 1 None passion fruit, seeds scraped out
- Preheat the oven to 250u0b0F. Bring the passion fruit juice and 1/4 cup of the sugar to a boil in a small saucepan. Remove from the heat. Mix the whole eggs, egg yolks and cornstarch in a large bowl with a whisk. Gradually whisk in the hot passion fruit juice. Pour into four 3/4 cup ovenproof glass ramekins. Place the ramekins in a roasting pan. Add enough boiling water to the roasting pan to come 3/4 up the side of the ramekins.
- Bake for 1 1/2 hours. Cool puddings in the water bath for 1 hour. Remove from the water batch and refrigerate for 1 hour.
- Beat the egg white, lemon juice and a pinch of salt with an electric mixer on high speed until stiff peaks form, gradually adding remaining 1/4 cup sugar. Spoon into a piping bag fitted with a large star tip. Pipe a swirl of meringue onto each pudding.
- Brown the meringue with a hand held torch or under the broiler for 2-3 mins. Sprinkle with the passion fruit seeds.
