Hearty Winter Vegetable And Couscous Soup

  1. Heat oil in large pot and stir onion, celery, garlic and paprika over medium heat until onion is soft, about 5-7 minutes.
  2. Add potato, parsnip, carrot, stock and water and bring to a boil. Reduce heat and simmer with lid on for about 15 mins or until vegetables are tender.
  3. Stir in couscous and parsley. Cook with lid off for 2 mins or until couscous is tender.
