Hearty Winter Vegetable And Couscous Soup
- 1 tbsp olive oil
- 2 None onions, coarsely chopped
- 3 None celery stalks, coarsely chopped
- 1 clove garlic, crushed
- 1 tsp sweet paprika
- 3 None potatoes, coarsely chopped (about 1 lb)
- 2 None parsnips, chopped coarsely (about 1 lb)
- 2 None carrots, coarsely chopped
- 1 3/4 cups chicken or vegetable stock
- 5 cups water
- 1/2 cup couscous
- 2 tbsp coarsely chopped fresh flat-leaf parsley
- Heat oil in large pot and stir onion, celery, garlic and paprika over medium heat until onion is soft, about 5-7 minutes.
- Add potato, parsnip, carrot, stock and water and bring to a boil. Reduce heat and simmer with lid on for about 15 mins or until vegetables are tender.
- Stir in couscous and parsley. Cook with lid off for 2 mins or until couscous is tender.
