Fideos Valenciana - Spanish Vermicelli With Seafood
- 1 None each red, yellow and green bell pepper, chopped finely
- 1 None onion, peeled and finely diced
- 2-3 cloves garlic, peeled and finely diced
- 750 g tomatoes, diced
- 16 None raw prawns, peeled with the intestines removed
- 500 g cod fillet, cut into cubes
- 3-4 tbsp oil
- 1 capsule ground saffron
- 1 tbsp paprika
- 500 ml fish stock
- 200 ml vegetable stock
- 300 g vermicelli
- 5-6 stems parsley, chopped
- Heat 2-3 tbsp oil in a pan and saute the prawns for 2-3 mins then remove from the pan and season to taste. Saute the cod for 2-3 mins, turning once carefully, then remove from the heat. Set aside.
- Heat 1 tbsp oil, saute the onion, garlic and peppers over medium heat. Add the tomatoes and simmer, uncovered, for about 10 mins. Add the saffron and paprika and season to taste. Add the fish and vegetable stock, bring to a boil then add the vermicelli. Bring back to a boil and simmer, stirring frequently, for 8-10 mins.
- Preheat the oven to 325u0b0F. Transfer the vermicelli mixture to a paella dish, sprinkle with parsley and add the prawns and cod. Bake for 15-20 mins then serve garnished with parsley.
