Steamed Banana And Pecan English Pudding
- 1 cup golden syrup (can substitute corn syrup)
- 2/3 cup butter, at room temperature
- 1/2 cup sugar
- 3 None large eggs, at room temperature
- 1/2 cup self-rising flour
- 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1.5 oz pecans, coarsely chopped
- 2 None very ripe bananas, mashed
- None None Vanilla ice cream, to serve
- Grease and line bottom of an 8-cup steamer basket with parchment paper. Place half the golden syrup in base of prepared basket.
- Beat butter and sugar in a bowl until light and creamy. Add eggs one at a time, beating lightly after each addition. Beat in remaining golden syrup until combined.
- Sift flour, baking powder and cinnamon into a bowl. Add half the flour mixture and pecans to butter mixture; fold to combine. Add half the banana; fold to combine. Repeat with remaining flour mixture and banana. Pour into prepared basket, level surface and cover with lid.
- Steam over simmering water for 1 1/2 hours or until a skewer inserted at center comes out clean. Remove from heat.
- Carefully remove lid and invert pudding onto a large flat heatproof plate. Cut into wedges and serve with ice cream.
